1 LB Sausage (Lean ground)
2 Large Carrots (Chopped)
2 Stalks Celery (Chopped)
1 Small Onion (Chopped)
2 Russet Potatoes (Peeled and cubed)
½ tsp Garlic Powder
½ tsp Onion Powder
¼ to ½ tsp Crushed Red Pepper (to taste)
¼ tsp Cayenne
¼ cup Flour
4 cups Chicken Broth
1 cup Whole milk
2 cups Finely Shredded Cheddar (Not low-fat)
Salt and Pepper to taste

In a large stockpot brown sausage. Add the carrots, celery, onion, potatoes, garlic powder, onion powder, crushed red pepper flakes, and cayenne. Cook over medium stirring regularly until carrots and potatoes begin to soften about 15-20 minutes. Add the flour and stir constantly for 2 minutes. Slowly add 2 cups of broth followed by ½ cup of milk, stir and add in the rest of the broth and milk and stir. Cook for 20 more minutes at a simmer stirring regularly. Slowly add in the cheddar and stir until melted. Salt and Pepper to taste. Serve.
If desired add a dollop of sour cream, shredded cheddar, or green onions once served.
